Rainy day. I love cooking on rainy days. Perhaps it’s because the aromas tend to hang in the humid air. It’s also comforting to smell good food being cooked when the weather is inconvenient and disruptive. So enjoy it! I’m sure you’ll enjoy the lunch Chef Oscar has planned for today. You’re going to smell it cooking.
Today’s soup is a hearty White Bean and Kale Soup. This soup, high in nutrition, is one of those comfort foods we often talk about here.
For the sandwich today we’ll enjoy Ilya’s delicious Hummus in Pita Bread. As part of his Greek heritage, Ilya has a lot of experience making hummus and he does it so well. Something to keep in mind – hummus is made using Tahini sauce. Tahini is made with pulverized sesame seeds. So if you’re sensitive to sesame, don’t eat the hummus!
The entrée today is Oscar’s version of a Thai Chicken Curry Stew. Seasoned with curry power, turmeric, coriander and cumin, it also has carrots, onions, red peppers and potatoes in it. The sauce has coconut milk in it. I can already smell it cooking.
Vegetarians have the option of Thai Curried Eggplant Stew. This vegetarian version has the same seasonings and ingredients as the Chicken Curry but it is made using our house vegetable stock instead of chicken stock.
Side dishes today include Snowpeas and steamed Basmati Rice.
It’s all good so enjoy the hot food along with the Salad Bar and finish off with some of the Fresh Fruit we have available.
Remember, eating well is the best way to stay healthy. Filling your body with nutritious, fresh food helps strengthen your immune system. Eating a lot of processed food and sugars has the opposite effect.
