You've got to love September!

I’m enjoying this streak of beautiful days so much. I’m reminded of a couple of lines from a poem, “September” by Helen Hunt Jackson, in which she said:

“By all these lovely tokens

September days are here,

With summer's best of weather

And autumn's best of cheer.”

Sometimes I just need a poet to express what I’m feeling!

Today’s lunch is a different take on a very popular dish, the Shepherd’s Pie. Here’s our menu for today:

I know a large number of you will be happy to know that our soup today is Split Pea Soup. This is a soup which is known to be smooth, creamy and smoky. We achieve this result through technique and seasonings. We never use any animal products in our soups, although you’ll wonder if this soup was prepared with ham in it! It’s all vegan!

 Today’s sandwich is sliced and roasted vegetables layered on a 7-Grain Baguette with a Sun Dried Tomato Dressing. Need I say that one is vegan as well?

 Our entrée, as I mentioned above, is Shepherd’s Pie. Now you’ll think of shepherd’s pie being made with either lamb or ground beef covered with mashed potatoes. But not today! How about Turkey Shepherd’s Pie with Pureed Sweet Potato Topping !? We’re using ground turkey, seasoned with rosemary and thyme from our Roof Top Garden, some onions, carrots, peas and garlic and some tomato paste to bring it all together. The topping will be pureed sweet potatoes! You’ll recall how well sweet potatoes and turkey go together for Thanksgiving, well…..let’s make it a pie! Sorry, no cranberries.

 Vegetarians will have a Black Beans and Veggies Pie with Sweet Potato Topping. No animal products in this so it is also vegan.

 Since we have sweet potatoes as part of the entrée, we have only one side dish, Sauteed Spinach. Keep in mind that you’ll also have a wide selection of choices available on the Salad Bar.
