Let's get healthy!
I’m so happy that it isn’t raining today. I was worried that I was going to mildew! Plus this weather hasn’t helped the illnesses going around. This may not be the coldest winter but it sure seems to be the sickest!
Lunch today is going to be healthy comfort food with a twist from the cuisine of Korea.
The soup today is Parsnip & Fennel. Both of these vegetables are rich in vitamin C and Potassium, both strong antioxidants for protection and immune system support. You’ll recall that parsnips look like small white carrots and fennel is a member of the onion family with a slight taste of anise (licorice).
We have a new sandwich today Vegetables Bibimbap Sandwich. When I saw it on Ilya’s menu I thought, “how can it be done?” Bibimbap is a Korean dish. The word literally means "mixed rice". Bibimbap is usually served as a bowl of warm white rice topped with sautéed and seasoned vegetables and gochujang (chili pepper paste), soy sauce and some type of protein is often added. But today we are doing it as a sandwich which means we will eliminate the rice and serve the veggies and tofu on a French baguette. Quite literally this sandwich will consist of garlicky veggies, kimchi, fresh spinach and roasted tofu drenched in a Korean pepper sauce with vegan mayo all stuffed into the baguette. Talk about UMAMI! This combination should be quite satisfying and it is certainly healthy!
The entrée for today is Korean Style Turkey Meatloaf made with ground dark meat turkey and seasoned with scallions, garlic ginger, sesame, soy, chili powder and cilantro. We’ve had this meatloaf many times and it’s a winner!
Vegetarians will have the choice of a Tofu Loaf with tofu, chopped vegetables formed into a loaf and seasoned with sage, thyme, parsley and various seasonings such as soy sauce, white miso, worcestershire sauce, Dijon mustard and lemon juice.
Side choices today are Sauteed Spinach and Quinoa.
Of course we have Salad Bar and plenty of Fresh Fruit for you.
