If there is ever a morning when it would be so nice to stay in bed, today is one of those days. Imagine all snuggled up in your sheets and pillows, a cool damp breeze blowing in and you are laying there comfortably drifting in and out of sleep. Later in the day, while still hanging in your pajamas you could call in Chinese takeout for lunch. Read a lot. Whoa! I need to wake up from that dream! It sounds good, but I wouldn’t want to be late for work! And, the truth be known, there are no Chinese takeout restaurants in my neighborhood have mediocre food! So happy to be at work today, and, of course, on time!
Today Chef Oscar takes over menu planning for 4 days. You’ll recall Oscar’s history with us: he started as a pot washer and he would often get the pots washed as fast as he could so he could help us prep food. Recognizing his interested in learning to cook, we got him a scholarship to attend the French Culinary Institute to learn the same skills and techniques that the rest of us learned there. When he completed his course of study we made him a Line Cook. After a little over a year he had shown such aptitude and talent and had improved on his skill so much that we promoted him to the position of Chef so that he could learn menu planning and development. You’re going to love what he has planned for you over the next 4 days.
Today, Chef Oscar is making Red Bean Soup for our “soup du jour”.
Our sandwich is going to be Corn Bread!
How about Roasted Chicken for the entrée? You’ve got to love our roasted chicken, crisp and nicely caramelized. Yum!
The vegetarian option is Roasted Tofu with a rich mushroom sauce.
Side dishes today will be Seared Green Beans and Smashed Potatoes with Roasted Garlic and Rosemary.
There will be a beautiful Salad Bar and today Marcus is making a pasta salad and potato salad for it. We have plenty of fresh fruit.
We also a baked dessert today!!! Pumpkin Cheesecake!

Our MS will be out today on their annual Field Day. I hope they have a great time!
