US Student Cooking Demo Highlights Importance of Ethically Raised Poultry

In the interdisciplinary Upper School elective The Art of Birding, Annelise M. '24 provided a cooking demo on how to make maple syrup and rosemary chicken. As teacher Auguste Elder describes, Annelise tied the presentation into the course by providing research into the difference between factory farms and small, independent family-run farms that raise chickens ethically. She highlighted what a healthy and normal lifecycle of a chicken looks like according to their biology and behavior, and how that differs from factory-raised poultry. As Auguste writes, "It was intelligently and compassionately presented!"
